The first working V-8 engine was patented in France by French engine designer Leon-Marie-Joseph-Clement Levavasseur. The engine block was the first to arrange eight pistons in the V-formation that allowed a crankshaft with only four throws to be turned by eight pistons.

Parmesan Turkey with Pasta Sauce
 
Ingredients
 
   12  ounces turkey tenderloin
 
   3  tablespoons Grape Nuts cereal
 
   3  tablespoons grated Parmesan or
      Romano cheese
 
   3/4  teaspoon dried Italian seasoning,
      crushed
 
   1/8  to 1/4 teaspoon ground red pepper
 
   1  egg white
 
   1  tablespoon water
 
   1  12-ounce package dried spinach
      fettuccine
 
   4  medium zucchini or yellow summer
      squash, halved lengthwise and thinly
      sliced (about 3-1/2 cups)
 
   2  cups low-fat, chunky tomato pasta
      sauce
 
Preparation
 
Preheat oven to 400 degrees F. Cut turkey tenderloin into 6 even pieces. In a shallow bowl combine Grape Nuts cereal, Parmesan or Romano cheese, Italian seasoning, and ground red pepper. In another shallow bowl slightly beat together egg white and water. Dip tenderloin pieces in egg white mixture, then coat with cereal mixture. Place turkey in a lightly greased baking pan. Bake for 12 to 15 minutes until turkey is no longer pink, turning once.

Meanwhile, prepare pasta according to package directions. During the last 2 minutes of cooking pasta, add zucchini or summer squash to pasta. Drain pasta mixture; set aside. Keep warm. In a small saucepan heat pasta sauce.

To serve, arrange pasta and squash on dinner plates. Top with turkey and sauce.

Serves 6

Healthy Catfish with Black Bean and Avocado Relish
 
Ingredients
 
   4-ounce fresh or frozen catfish fillets,
      about 1/2 inch thick
 
   teaspoon finely shredded lime peel
 
   tablespoons lime juice
 
   tablespoons snipped fresh cilantro
 
   tablespoons snipped fresh oregano
 
   tablespoons finely chopped green onion
 
   tablespoon olive oil
 
   teaspoon salt
 
   teaspoon cayenne pepper
 
   15-ounce can black beans, rinsed
      and drained
 
   medium avocado, halved, seeded,
      peeled, and diced
 
   medium tomato, chopped
 
   Lime wedges
 
Preparation
 
Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Set aside.

For relish, in a small bowl, combine lime peel, lime juice, cilantro, oregano, green onion, olive oil, salt, and cayenne pepper. In a medium bowl, combine beans, avocado, and tomato; stir in half of the cilantro mixture. Cover and chill until serving time.

Place fish on rack of an uncovered grill directly over medium coals. Grill for 4 to 6 minutes or until fish flakes easily when tested with a fork, turning and brushing once with remaining cilantro mixture halfway through grilling.

Discard any remaining cilantro mixture. Serve fish with relish and lime wedges.

Serves 6.

Golden Green Paella

 

 

 

 
Ingredients
 
   2 Tbsp. extra virgin olive oil
 
   8 oz. peeled and deveined medium
      shrimp, coarsely chopped
 
   1/2  tsp. salt
 
   1/4  tsp. black pepper
 
   1  large onion, chopped
 
   3  cloves garlic, minced
 
   1 cup instant brown rice
 
   1/2  tsp. dried oregano, crushed
 
   1/4  tsp. ground turmeric
 
   1  14-oz. can reduced-sodium
      chicken broth
 
   8  oz. fresh sugar snap pea pods
      (2-1/3 cups)
 
   1  large green sweet pepper, cut
      into 1/2-inch pieces
 
   2  green onions, diagonally sliced
 
   2  Tbsp. chopped fresh Italian
      (flat-leaf) parsley
 

 

 

Preparation

 

 

 

In large nonstick skillet heat 1 tablespoon of the oil over medium-high heat. Add shrimp; sprinkle with half the salt and pepper. Cook, about 2 minutes or until shrimp are opaque, stirring occasionally. Remove from skillet; set aside.

Add remaining oil to skillet. Cook onion until almost tender. Add garlic; cook 1 minute. Stir in rice, oregano, and turmeric; cook and stir 1 minute. Add broth and remaining salt and pepper. Bring to boiling; reduce heat. Simmer, covered, 5 minutes or until most of the liquid is absorbed and rice is tender.

Stir in peas and green pepper; cook 3 minutes. Stir in shrimp and green onions. Sprinkle with parsley.

Serves 2.
